My Nonna Bella still makes these on Saturday afternoon. The beef gets started waaaaaay early in the morning (like maybe 5 a.m., ‘cause I’m sure Nonna never sleeps – or she is a Buona Strega. I don’t think I’ll ever know. I’ve never seen her sleep. She came with the casa – actually with the stove. She is either making sauce (ragu), cooking sausages, baking a chicken with Rosemary (the spice, not my cousin), a pork roast with little garlic pockets, veal scallopine, a good batch of tortellini in broth or mixing up cannoli. The woman is a cooking wizard.
This cooks most of the day even while we go to Confession at Our Lady of Perpetual Help. When we get home, the smells are THE BEST!
